After looking at previous comments, I used the self raising flour method and 2 level tsp of baking powder. I added only 2 tsp of cinnamon as I really wanted it to taste strongly of bananas (I added 4 quite small ones). Only had 90 grams of brown sugar, and added 50g of chopped walnuts. I baked for 20 mins and banana bread was browning - but not cooked, I covered with foil as suggested. Took out after another 10 mins and was nervous as it was browner then I would of liked. Just had some and it was divine :) nice amount of banana flavour aswell as cinnamon. Probably will add even less baking powder next time as it leaves a slightly bitter taste but not really. Defo would recommend so simple, quick and really delicious:)

Ingredients

  • 1 cup chopped walnuts (or pecans, vegan chocolate chips, or your favorite banana bread stir-in)
  • 1/3 cup canola oil (or your favorite baking oil)
  • 1/3 cup organic granulated sugar
  • 1/3 cup organic brown sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 3 medium overripe bananas
  • 2 cups all-purpose flour
  • 1 teaspoon salt

For Topping
  • 1/4 cup organic brown sugar


Instructions

Number One :Preheat the oven to 350°.
Number Two :Number TwLightly oil a 9-inch loaf pan and arrange a strip of parchment paper width-wise along the center, with just a bit hanging out over each side.
Number Three :Peel the bananas and place them into a large mixing bowl. Mash them well with a fork or potato masher.
Number Four :Add sugar, brown sugar, oil, and vanilla to the bowl. Stir until well-mixed.
Number Five :Add the flour to the bowl, then sprinkle the baking soda, cinnamon and salt on top of the flour.
Number Six :Stir everything together just until mixed. Don't overmix. The batter will be thick.
Fold in the walnuts.
Number Seven :Spoon the batter into the prepared loaf pan and smooth out the top with the back of a spoon.
Number Eight :Sprinkle the top with brown sugar.
Number Nine :Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
Number Ten :Remove the pan from the oven and transfer it to a cooling rack. Allow the loaf to cool Number Eleven :for at least 15 minutes before removing it from the pan.
Last Slice and serve.
