Raw Vegan Holiday Recipes Mashed Potatoes

Ingredients:

  • 3 cups chopped raw cauliflower
  • 1/2 cup raw cashews (soaked in cold water 4-6 hours beforehand if possible)
  • 1/4 cup nutritional yeast
  • 1 pinch pink salt (optional)
  • 2 tbsp Italian seasoning
  • 1/4 cup fresh chives

Directions:

Wash and chop up cauliflower, place into food processor fitted with "S" blade. Add all remaining ingredients except for the chives.

Pulse food processor until the mixture gets going, stopping the machine and scraping down as needed. If your ingredients are too dry, you may drizzle in tiny amounts of water one tablespoon at a time to get it really creamy. Taste mixture to see if you would like to add salt or not.

I rarely use salt but do offer it as an option. When a mashed potato consistency is achieved, spoon it into a serving bowl and top with chives. You may also choose to stir in the chives by hand. There is no wrong way. Enjoy!
